This time #rumfamily is once again in London to hear from someone we have enjoyed many a great cocktail with at one of the UKs best Rum lounges, Trailer Happiness, the awesome Joseph Wilkins. Trailer is a go to place for great Rum and cocktails and Joe is the perfect bartender to meet your needs!
How long have you been bartending?
About 6 years now.
What made you decide you wanted to work behind a bar?
Pure luck and circumstances but I found a real passion for hospitality working in Brighton.
Where do you find your inspiration for new cocktails?
Everywhere! Songs, places, moods. The world is full of inspiration if you look for it!
What’s your go to ingredient?
Rum…? That or Sherry at the moment.
What’s your proudest accomplishment so far?
Being invited to make Cocktails on a beautiful beach in Athens was pretty cool. That or my all too short GM position at my favourite bar of all time The Portobello Star (before the change of ownership).
Define the perfect cocktail?
Balance of course. Otherwise I enjoy flavour combinations I haven’t thought about.
What is your go to drink on a night out?
Daiquiris or Tommy’s Marg for simplicity and taste. Otherwise I enjoy anything new to me.
What’s your favourite thing about working behind a bar?
The people! I love talking to customers and creating memories for them and me!
What’s your least favourite thing about working behind the bar?
The usual suspects, impatient/rude people, endless cleaning, long nights etc. It’s a small price to pay for the best job in the world though…
What is your favourite drink to make?
Missionary’s Downfall is great when you get the flavour balance and consistency just right.
