Cachaca Cocktails-Part 1

Recently we decided to share our love of Cachaca with the guys at Haycock & Tailbar Associates. Not only is it good to share but we were interested to see what cocktails they would suggest or could create using their experience and expertise. Robert Squire (you can read more about Robert here) and Rob Badger were behind the bar so we were in great hands. We took a variety of Cachacas, some young, some old and also a selection showcasing the different woods used to age the spirit. Having tasted the Cachacas it was interesting to observe the thought process matching them to classics or in building the cocktails using some of the notes detected in the Cachaca and then using knowledge of pairings to create the drink.

Cacahca Companeira Extra Premium

Paloma

50ml Companheira Extra Premium
50ml Grapefruit Juice
20ml Fresh Lime Juice
10ml Sugar Syrup
Top up with Soda Water

Dom’s Paradise

35ml Dom Bre Amburana
20ml Fresh Lime Juice
3 dashes Orange Bitters
25ml Pineapple Brown Sugar Syrup
12.5ml Orange Liqueur

Cachaca Dom Bre
Cachaca Colombina

Columbina Ruin

50ml Columbina Cachaca
20ml Rin Quin Quin Peach Vermouth
Bar Spoon Rose Water
Stir with ice
Rub Lime Oil on rim of glass
Lime Peel garnish

The Hoffee

40ml Hof Alma da Serra Americano
20ml Coffee Liqueur (Conker Spirit Cold Brew Coffee Liqueur)
10ml Creme de Cassis

Cachaca Hof Microdistillery
Cachaca Companeira Extra Premium

Sweet Brazilian

45ml Companheira Extra Premium
20ml Creme de Mure
10ml Pineapple Syrup
10ml Fresh Lime Juice
10ml Sugar Syrup

Old Fashioned

Sapucaia real 18 years
Angostura Bitters
Brown Sugar

Rum Old Fashioned

We had such a fantastic night. The experience will surely be repeated in the near future with a new raft of Cachacas. Mrs Fs favourite was the Dom’s Paradise. As someone who loves Rum, Cachaca certainly is an interesting spirit with a lot to offer. Thanks to both Robert Squire & Rob Badger for their expertise!
